INGREDIENT :
500 grams of goat meat
3 tablespoons of oil
5 red onions, thinly sliced
3 cloves of garlic, thinly sliced
1 lemongrass stalk, bruised
SOFTENED SEASONING
6 pieces of red chili
2 cm ginger
1 Cm Turmeric
2 Cm Galangal
(Roast first)
1.5 Teaspoon coriander
1/4 Teaspoon cumin
1/4 Teaspoon of anise
2 cm cinnamon
1/2 nutmeg
1/2 Teaspoon pepper grains
350 milliliters of liquid coconut milk
1 cm kandis acid
200 milliliters thick coconut milk
Salt to taste
Fried onions for sprinkling
HOW TO MAKE
Cut the mutton into large pieces, set aside. Heat the oil, saute the onion, sliced garlic, and lemon grass until fragrant. Add ground spices, stir-fry until cooked
Add mutton, stir until it changes color. Add liquid coconut milk and kandis acid. Cook until the meat is cooked. Turn down the fire.
Add thick coconut milk. Cook, stirring occasionally, until the meat is tender and the gravy is thick. Lift. Sprinkle with fried onions.
