Sour Tripe For 4 People

 


Ingredients

500 grams of goat tripe

3 lemongrass stalks, bruised

water to boil tripe

3 tablespoons of oil

Softened seasoning

7 red onions

4 cloves garlic

6 pieces of red chili


Spices that are not mashed

2 cm turmeric

2 cm ginger

3 cm galangal, bruised

150 ml water

2 tablespoons of tamarind water

salt to taste

1.5 teaspoon granulated sugar


How to make

Bring the water to a boil, pour it over the tripe. Scrape the outer layer with a knife until the tripe is clean. Boil tripe with lemongrass until cooked. Lift, throw the water. Cut the tripe, set aside.

Heat oil, saute ground spices and lemon grass (sia boil tripe) until fragrant and cooked. Add goat tripe, mix well. Add water, tamarind water, salt, and sugar. Stir again until smooth.

Cook the tripe over low heat until the spices are absorbed and the gravy is thick and then remove.
